Farm
Our
Farm
Il Falcone is an agriturismo with a farm in Suvereto, in the heart of the Tuscan countryside, and represents one of the oldest rural realities in the area. The farm takes its name from the hill on which it stands and is already documented in the cadastral maps of the Grand Duchy of Tuscany from 1821, although its origins are even older. Since 1911 it has been owned by the Petri family and today is managed by Paola and Rosa together with their respective husbands, Vittorio and Paolo, and their daughters Emma and Chiara, passionately carrying forward a long Tuscan agricultural tradition.

The farm extends over approximately 100 hectares of land in Suvereto, with 10 hectares of vineyards and over 4,000 centuries-old olive trees, protected by a natural hillside setting that creates an ideal microclimate for vine and olive cultivation. Thanks to experience passed down through generations and the combination of traditional methods and modern agricultural techniques, Il Falcone produces local excellence while minimizing the use of pesticides through sustainable farming practices. Since 2022, the farm has been organic certified, confirming its ongoing commitment to protecting the environment, biodiversity, and the quality of its products.

The favorable climatic conditions and constant care of the land allow the production of high-quality Tuscan IGT and DOCG wines, including young reds, structured aged reds and white wines, as well as Grappa Toscana Bianca and an excellent extra virgin olive oil. All products from Il Falcone farm are available for direct purchase on-site, offering guests the opportunity to take home the true flavors of Tuscany.
The Cellar
Right at the entrance, on the ground floor of the current owners' residence, is the farm's cellar, the beating heart of the harvest, where all winemaking activities take place. Il Falcone produces an average of 45,000 bottles annually, marketed worldwide.
From the cellar, through a few steps, you reach a second room where the barrel room is located: a cellar from another era, splendid with stone walls, vaults characteristic of Tuscan style, soft lighting and muffled sounds; this is where the aging of the reds takes place, in French oak barriques at controlled temperature.
Unique in their majesty, right next to the cellar you can admire the centuries-old olive trees. These wonderful plants have inhabited the lands of Il Falcone for over 500 years and produce, in alternate years, up to 150 kg of olives per tree.
During the farm's organized tastings, the owners accompany visitors inside the cellars and upon request also to discover the centuries-old olive trees, a unique experience, absolutely not to be missed!

Philosophy of
Production
Everything begins here. In our fields, in our family, in the passion we put into our work every day.
Production takes place entirely within our farm, allowing us to personally oversee every phase, from field to bottle. Being a family-run farm for five generations means everyone actively participates, sharing responsibilities, choices and goals.
We have chosen organic as a philosophy of life even before production: natural treatments in the field and consistent processes in the cellar as well, to create products that respect the territory and tell its identity. A balance between quality, sustainability and passion that can be perceived in every detail.
Our
Products
Our products tell the story of the territory through precise choices, selected grapes and careful processing, followed step by step within our farm.

Falcobianco
is our Vermentino, the white grape symbol of the Tuscan coast. The warm and breezy climate in which it is born gives this wine a pleasant freshness and delicate floral notes, making it elegant and immediate, perfect for those seeking an authentic and territorial white wine.
Falcorosa
is our rosé, a blend of Sangiovese, Merlot and Syrah. A fresh and harmonious wine, characterized by aromas of cherry and dog rose, capable of combining drinkability and character in every sip.

Falcorosso
represents the younger soul of our production of red wines. Obtained from Sangiovese grapes, it is a smooth and versatile red, deeply connected to Tuscan tradition and ideal paired with many local cuisine dishes.
Alongside these, our more structured reds are born, the fruit of time and patience.
Boccalupo DOCG
a blend of Sangiovese, Merlot and Cabernet Sauvignon, is born from a careful selection of the best grapes and aging of approximately 20 months in oak barriques with medium toasting. It is a structured and deep wine, with powerful yet elegant tannins, capable of expressing all the complexity and ambition of our farm.

Vallin dei ghiri
Pure Syrah, follows the same long rest in barriques, from which an intense, full-bodied and enveloping wine is born, with great aromatic depth and a decisive personality.
in addition to wines Il Falcone also produces Extra Virgin Olive Oil
organic extra virgin olive oil
obtained from the typical varieties of Tuscan olive trees. Cold pressing preserves aromas and quality, giving life to an oil with a decisive character and medium spiciness, a sincere expression of our territory

Completing our production philosophy are also the grappas, born from the distillation of the pomace of our red grapes. A choice that reflects our commitment to sustainability and the valorization of every raw material, following a principle of circularity that wastes nothing and gives new life to what is born in the vineyard.

Grappa Bianca
presents itself clear and crystalline, with a clean and intense bouquet, broad and elegant. On the palate it offers a distinct fruity opening, with sensations of fullness, fragrance and roundness that blend in a harmonious and pleasant balance.
Grappa Riserva
Rests for approximately 18 months in oak barriques, acquiring a golden color and greater aromatic complexity. The long aging enriches the sensory profile with intense and enveloping notes, among which tobacco notes stand out, making it deep and persistent

Olive Trees and
Extra
Virgin
Olive Oil
Our olive groves count approximately 4,000 trees, many of which are centuries old. Trees that have crossed time, seasons and generations, continuing even today to give us the olives from which our oil is born, with the natural rhythm of alternating years. Majestic and silent presences, which tell of the longevity of our family and the deep bond with this land.
We cultivate exclusively the symbolic varieties of Tuscany: Moraiolo, Leccino, Frantoio and Pendolino. From their union our organic extra virgin olive oil is born, the fruit of a harvest that takes place in November by hand, with the aid of mechanical facilitators, and strictly cold pressing.
Filtration takes place in a natural manner, to best preserve its aromaticity and freshness; from which an oil with a decisive and fruity character is born, with medium spiciness, capable of expressing all the identity of our territory.

Vineyards
Our vineyards are the fruit of a history built over time. The oldest vines areover fifty years old and represent the historic heart of our production. Alongside these, even the new plantings, established over twenty years ago, have already reached full maturity, capable of expressing deep and conscious wines. Vines that are not simply cultivated, but inherited and preserved, as an integral part of the identity of our family and this territory.
The vineyards grow on calcareous-clay soil, a composition that gives structure, balance and character to the wines, allowing the grapes to best express the varietal peculiarities and the imprint of the place where they are born.
The care of the vines is constant and accompanies the entire cycle of the year: from green pruning to vine removal, up to harvest. All work is carried out exclusively by hand, to preserve quality and allow a first, careful selection directly in the vineyard. The vines, trained in spur-pruned cordon, are managed with different exposures depending on the type of wine they will create, respecting the needs of each variety.
